“HONGKONGESE” RECIPE

Fresh shrimp seasoning is great when you have noddle, whatever it is in soup or lo mein.  You can make whatever seasoning you want at any time with your Vitamix machine.

Shrimp Seasoning

Ingredients

Tiger prawn 16 pcs
Salt 1g (¾ teaspoons)

 

Procedures

  1. Cut the top part of prawn head, including antennas, eyes and rostrum, all legs and remove the intestine. Then, wash all prawns with filtered water;
  2. Pre-heat the dehydrator to 68o
  3. Boil a pot of water, that can cover all prawns, place all prawns into the boiling water for 30-45 seconds. Then, scoop up and dry;
  4. Put all prawns into the dehydrator and dry for 12-14 hours;
  5. Place all dehydrated prawn and salt to the Vitamix container and put the lid on;
  6. Start the machine on its lowest speed, then quickly increase to its highest speed;
  7. Run the machine for 1 minute, set aside for cool down;
  8. Put in a glass preserving jar for storage.

TIPS: You can use dehydrated fish for making seasoning. If you are vegetarian, you can use dehydrated
