“HONGKONGESE” RECIPE

Don’t worry!  Your Vitamix machine can definitely make steaming-hot Hongkongese soup for a meal or as soup base for rice noddle.– Red Shirt Fish Soup

Red Shirt Fish Soup

Ingredients (3-4 servings)

Hot water 960ml (4 cups)
Red shirt fish 120g (1 pc)
Ginger 2 slices
Salt 3g (½ teaspoon)
Cooking oil 14ml (1 tablespoon)

 

Procedures

  1. Assuming the red shir fish has been scaled and gutted, cut the fins, wash the whole fish with filtered water and dry with kitchen towel;
  2. Heat the pan over high heat and reduce to medium once the pan is hot. Add cooking oil and coat the bottom of the pan thoroughly;
  3. Place ginger to the pan, pan-fry for 30 seconds, then place red shirt fish to the pan. Cook one side of the fish for 2-3 minutes or until brown, then turn to the other side and also cook for 2-3 minutes.  Turn around 2-3 times until the fish is cooked;
  4. Pour hot water into the pan and cook for 1 minutes. Then, turn off the stove;
  5. Place the cooked fish with boiled water into the Vitamix container and put the lid on;
  6. Start the machine on its lowest speed, then quickly increase to its highest speed;
  7. Run the machine for 7 minutes.

TIPS: It is not recommended to use other kind of fish to make this fish soup. If the fish soup cannot be consumed in one time, you can put the soup in ice tray to make fish soup ice cube for storage.
